多酚氧化酶催化合成茶黄素研究

摘 要:

茶黄素是红茶的主要品质成分, 并具有广泛的生理药理活性。利用多酚氧化酶(polyphenol oxidase, PPO)体外酶促转化是生产茶黄素的有效方法。本文从PPO酶源的筛选、反应体系的优化、固定化PPO转化茶黄素及PPO构效关系等方面综述了PPO催化合成茶黄素的研究进展, 为工业化制备茶黄素奠定基础。

Abstract:

Theaflavin is the main component of black tea, having various biological activities. Production of theaflavin by polyphenol oxidase (PPO) in vitro is deemed to the best method. In this review, screening of PPOsource, optimization of reaction system, synthesis of theaflavin with immobilized PPO, and structure-activity relationship of PPO were summarized, which provided theory and technology supports for preparation of theaflavin in industry.
